There are many shared hosting providers which claim lots of stuff, but really don't deliver on it, regardless of it being unlimited or not.
I find, one of the critical issues, is that there's no standard definition for load usage, so a host can always kick you off for exceeding their load limits (whatever that is). Thus, theoretically, they can offer unlimited space and storage, as long as they don't allow unlimited load, and their ToS protects them from people using their servers to hoard data.
